A restaurant can collect more reviews in a busy weekend than a contractor collects in a year, which means the rating is volatile and recency dominates. Diners filter by rating on Google, Yelp and the reservation platforms, then read the three most recent reviews to check that nothing has changed - a new chef, a service collapse, a price rise. Because volume is high, one bad night matters less than in other industries, but a bad month is visible immediately.
